Having made a formal commitment to #meatlessmondays recently, but following the campaign loosely since its inception, I have promised to bring my readers more interesting and healthy vegetarian recipes. What better way to "step up," than to bring you a collection? 14 Protein-Rich Vegetarian Main Dishes is a collection of recipes with generous amounts of protein (19g to 34g per serving) and lots of global flare as per usual. 🙂 When I put out the ISO (In Search Of) for protein-rich recipes with "global emphasis," I received 112 submissions. They were, for the most part, very healthy-looking and appealing recipes. I edited the list down to 33, and made the decision to spend the extra time to enter the recipes in MyFitnessPal - an online application for determining nutrients in recipes. I was looking for recipes with 20 to 30 grams per serving. I was surprised at the number of recipes that were far below that amount. I decided to stick close to that range, and I am confident the final list of 14 delivers on both flavor and nutritional value. It was a very interesting exercise, and as an advocate for a healthy lifestyle, I can't help but be a little concerned about the number of vegetarian recipes in the blogosphere that don't contain adequate amounts of protein in the context of an exclusively vegetarian diet...
