Ingredients
  

  • 1 12 inch pizza dough or crust - about 1 pound of dough
  • 1 cup shredded chicken (about 1 medium breast) - see Ingredients Notes in post
  • 2 tablespoons hot honey
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 ounces bleu cheese - crumbled
  • 2 ounces fresh mozzarella - cut in thin strips or grated
  • 2 scallions, chopped - green parts only
  • 6 large fresh basil leaves, chiffonade - or other fresh herb

Instructions

  • Preheat oven to 450℉/232℃.
  • Add the olive oil, balsamic vinegar, and hot honey to a prep bowl, and whisk. Add the shredded chicken, and stir to combine.
  • Lightly spray or oil a baking stone or sheet. Sprinkle lightly with cornmeal. Top the pizza dough/crust with both chicken and glaze over top.
  • Top with crumbled bleu cheese and mozzarella.
  • Bake until crust is lightly browned (lift edge to check underneath), and the cheese is bubbling and browning. This may take 8-12 minutes depending on the thickness of your crust.
  • Garnish generously with basil and scallions.
