Tajín Chicken

Veggie Slaw

  • 2 ounces cabbage, shredded
  • .5 ounce carrot, shredded
  • ½-1 jalapeño - thinly sliced
  • 1 scallion - chopped
  • 2 tablespoons cilantro - chopped
  • ½ lime - squeezed over slaw ingredients
  • sea salt and fresh ground pepper - to taste

Crudite, Condiments, and Extras

  • 2 tablespoons cilantro ranch - or similar (for the slaw)
  • 2 tablespoons avocado hummus - or similar (for the veggies)
  • an assortment of raw veggies - as desired
  • tortilla chips - as desired

Instructions

  • Combine the shredded chicken with the tajín.
  • Combine all slaw ingredients, and toss to combine.
  • Assemble the bento box.
  • To serve - toss the slaw with the cilantro ranch. Top with tajín chicken. Enjoy the veggies and chips with the spicy avocado hummus.

Notes

Macros will vary. My calories calculation includes 4 ounces of shredded chicken breast with tajín, the slaw with my cilantro ranch, 1 corn tortilla (oven baked), and 2 tablespoons of my spicy avocado hummus.
