Ingredients
 
 

  • 18 ounces pineapple, small dice - about 3 cups
  • 1 cup granulated panela - see Ingredients Notes above
  • 6 strips lime peel - avoid white pith
  • ½ cup champage vinegar - to 1 cup
  • 5 dashes fire tincture bitters +/- - see Ingredients Notes above

Instructions

  • Add diced pineapple, panela, and lime peel to a clean glass jar or bowl. Stir to combine. Cover, and let it rest on the counter, stirring at least once per day.
  • Press firmly through a fine mesh sieve to extract the syrup.
  • Add the vinegar starting with ¼ cup, and adding a little at a time to desired tartness.
  • Add bitters a dash at a time to achieve your preferred heat level.
  • Store in an airtight glass container in the refrigerator.
