Ingredients
  

  • 1 clove garlic - roasted if possible
  • 1 shallot - or ½ small red onion
  • cup olive oil
  • cup vinegar - see Ingredients Notes in post
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • ½ teaspoon sea salt and several grinds pepper - to taste

Instructions

  • Add all ingredients to a small blender. Pulse until smooth and emulsified.

Notes

The calories on this salad dressing are a bit high for a 2 tablespoon serving. I don't typically go that heavy on my dressings. Also, any dressing with a 1:2 ratio of vinegar to olive oil will be high in calories.
