1tablespoonchile lime seasoning (see notes) - Peruvian or Tajín
flake salt (see Notes below) - or other sea salt
Instructions
Peel and core the yuca root. See How to Peel and Cook Yuca for more information. Slice into rectangular pieces 3 to 4 inches long.
Parboil the yuca pieces until they start to split - 10 to 15 minutes. They should be almost fork tender. Preheat air fryer to 400℉
Drain the par-cooked yuca. NOTE: Pat dry with paper towels to remove as much moisture as possible! Add the chile lime seasoning and olive oil to a medium prep bowl. Whisk to combine. Toss with the prepared yuca thoroughly to combine.
Add seasoned yuca to the basket of the air fryer in a single layer (do not crowd). Cook the fries for about 15 minutes turning once, or until golden and crunchy. NOTE: Keep in mind that time to cook yuca in an air fryer will vary depending on the model and size of your air fryer.
Finish with a sprinkling of flake salt (or your preferred sea salt). Garnish with lime wedges and cilantro as desired!
Notes
My Peruvian seasoning has salt in it, as does Tajín seasoning. I reserve the flake salt to sprinkle on when the yuca fries come out of the air fryer.
