👩🏻‍🍳 Tamara Talks – About Yuca and Yucas Fritas

Yuca root, also known as cassava, is a drought-tolerant starchy tuber native to South America and widely cultivated in tropical regions around the world. It’s a long, thick, and tapered root with a tough, brown, bark-like outer skin and dense, white flesh inside. Yuca is a major source of carbohydrates and is a staple food in many countries, particularly in Africa, Asia, and Latin America. On our many Peruvian travels, yucas fritas with guacamole was a much anticipated treat.

Yuca root is incredibly versatile and can be boiled, fried, baked, mashed, or ground into flour (used to make tapioca). It has a mild flavor, slightly sweet and nutty, and is often used in dishes like yucas fritas (fried yuca), cassava bread, and traditional stews. However, raw yuca contains naturally occurring compounds called cyanogenic glycosides, which can produce cyanide if not properly processed. So it must be cooked thoroughly to be safe to eat.

There are two main types of yuca: sweet yuca (which has lower levels of cyanide and is generally safer) and bitter yuca (which requires more extensive processing). Typically, the yuca found at the supermarket is sweet yuca, and can be peeled and eaten. Bitter yuca is not sold for home use, but is used in products like tapioca and other by-products. Are air fryer yuca fries healthy?

Yes, yuca root can be a healthy addition to your diet depending on cooking method. It is rich in carbohydrates, making it a great energy source, and provides several essential nutrients. Here are the Pros:

  1. High in Carbohydrates: Yuca is primarily composed of complex carbohydrates, which provide sustained energy. This makes it a good option for athletes or people with high energy needs.
  2. Rich in Fiber: The fiber in yuca can aid digestion and promote gut health by helping regulate bowel movements and preventing constipation.
  3. Vitamins and Minerals: Yuca is a good source of vitamin C, folate, and potassium.

Here are the cons:

  1. High in Calories: Due to its starch content, yuca is relatively high in calories, so portion control is important if you’re watching your calorie intake.
  2. Cyanogenic Compounds: Raw yuca can contain cyanide, so it must be prepared properly to avoid toxicity. Yuca sold for home use needs to be peeled, and it should be fine. Commercially sold yuca is safe when prepared as directed.

In moderation and when cooked properly, yuca can be a nutritious and satisfying food.

  • yuca root –
  • chile lime seasoning – I keep this Peruvian chile lime seasoning in my pantry. Tajín or homemade tajín are very close in flavor, containing dehydrated lime and chile powder. The Peruvian seasoning also contains cumin. NOTE: The seasoning is pretty likely to have salt. Read the label, and adjust. That is why I suggest adding a bit of flake salt at the end.
  • olive oil
  • sea salt – I like this flake salt, but you can use whatever sea salt you prefer.

🔪 Step-By-Step Instructions

  • Break down the yuca root – Yuca has an inedible “bark” skin that must be removed as well as a fibrous core that you’ll want to remove. How to Peel and Cook Yuca (Cassava) has good photos to aid in the process if you’re unfamiliar with cooking with yuca root.
Boil the yuca root in salted water.
  • Parboil the yuca – Boil the yuca pieces until they start to split (about 10-15 minutes depending on thickness). Soggy yuca will not work in the air fryer. It is better to under-cook than over-cook. NOTE: Fork tender should be perfect! While the yuca parboils, preheat the air fryer to 400℉.

  • Season the yuca root – Drain the par-cooked yuca. NOTE: Pat dry with paper towels to remove as much moisture as possible! Add the chile lime seasoning and olive oil to a medium prep bowl. Whisk to combine. Toss with the prepared yuca thoroughly to combine.

  • Air fry the yuca fries – After tossing the yuca with seasoning, add to the basket of the air fryer in a single layer (do not crowd). To cook, slide the basket into the air fryer and cook the fries for about 15 minutes turning once, or until golden and crunchy. NOTE: Keep in mind that time to cook yuca in an air fryer will vary depending on the model and size of your air fryer. Finish with a sprinkling of flake salt (or your preferred sea salt).

❓FAQ

Are yucas fritas good left over?

Meh. I don’t love them. If you want to give them a try, reheat in the air fryer rather than microwave to crisp them up.

What can I serve with yucas fritas?

We love this ají verde sauce, this huancaína sauce, and this creamy rocoto salsa.

💭 Tips

Make sure the yuca root is TOTALLY dry before seasoning and putting in the air fryer!

Fried yucas fritas are a guilty pleasure when we’re in Peru. However, I rarely eat fried food at home. Using an air fryer makes yuca fries less messy to make, and reduces fats and calories substantially. Try them as an appetizer next time you make ceviche, arroz con pollo, or pollo saltado!

  • pounds yuca root - peeled, cored, and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chile lime seasoning (see notes) - Peruvian or Tajín
  • flake salt (see Notes below) - or other sea salt

Instructions

  • Peel and core the yuca root. See How to Peel and Cook Yuca for more information. Slice into rectangular pieces 3 to 4 inches long.
  • Parboil the yuca pieces until they start to split – 10 to 15 minutes. They should be almost fork tender. Preheat air fryer to 400℉
  • Drain the par-cooked yuca. NOTE: Pat dry with paper towels to remove as much moisture as possible! Add the chile lime seasoning and olive oil to a medium prep bowl. Whisk to combine. Toss with the prepared yuca thoroughly to combine.
  • Add seasoned yuca to the basket of the air fryer in a single layer (do not crowd). Cook the fries for about 15 minutes turning once, or until golden and crunchy. NOTE: Keep in mind that time to cook yuca in an air fryer will vary depending on the model and size of your air fryer.
  • Finish with a sprinkling of flake salt (or your preferred sea salt). Garnish with lime wedges and cilantro as desired!

Notes

My Peruvian seasoning has salt in it, as does Tajín seasoning. I reserve the flake salt to sprinkle on when the yuca fries come out of the air fryer.

  1. I love yucas fritas, and this is a great low-fat alternative. The yuca root is a pain to peel, but a regular potato peeler will do the job. You can also sometimes find frozen peeled yuca root if you have a local hispanic market. When we have these in Peru, they’re most often served with lightly salted mashed avocado (a pastry cutter works great for this).
