Peruvian-Inspired Recipes
An American approach to Peruvian cooking... Accessibility to Peruvian ingredients is pretty hit or miss. Many items - chile peppers and pastes, quinoa, cilantro - relatively easy to find locally or order. Others - the amazing variety of root vegetables - for example, are more difficult.
I take a healthyish approach to my cooking, and avoid some traditional Peruvian ingredients like canned evaporated milk and white bread. I've actually gotten scolded for that in my Healthier Ají de Gallina. You will find my Peruvian recipes are "inspired," rather than "authentic."
