Equipment

Ingredients
  

  • 1.25 pounds roma tomatoes - quartered
  • 1 bulb garlic - top cut off to expose cloves
  • 4.5 ounces raw - unsalted pepitas
  • 1-1.5 cups broth
  • 1 tablespoon coconut or vegetable oil
  • 5 tablespoons red chile sauce - see post and notes]
  • sea salt and fresh ground pepper to taste
  • chopped cilantro - scallions, crumbled cotija to garnish as desired

Instructions

  • Preheat oven to 400 degrees (375 convection).
  • Arrange tomatoes and garlic on a baking sheet.
  • Roast until the edges begin to brown. Garlic will be ready at 20-25 minutes (set a timer). The tomatoes will need 35-45 minutes.
  • While the tomatoes and garlic roast, toast the pepitas in a medium-hot dry pan. Watch them carefully as you don't want them to scorch. The seeds should have a good amount of brown on them.
  • Set aside to cool.
  • Add the prepared pepitas to the bowl of your food processor. Pulse until finely ground.
  • Add the tomatoes, garlic cloves (squeezed from their skins, and broth (start with about 1 cup).
  • Process until smooth.
  • Heat the oil in a skillet over medium to medium-high heat. Stir in the red chile sauce, and cook 2-3 minutes (stirring continuously).
  • Add in the pepita-tomato mixture. Continue to stir an additional 2-3 minutes.
  • Season with salt and pepper to taste.
  • Garnish with cilantro, crumbled cotija (not vegan), scallions as desired. Serve with chips, crackers, or veggies.

Notes

As I mention in the post, you can purchase red chile sauce (New Mexico red, guajillo, ancho, etc.) or you can make your own by rehydrating dry red chiles and processing them until smooth.
