In this category, you’ll find recipes with roots in New Orleans, in coastal U.S. communities, and in the desert Southwest. “American” cuisine is a fusion of the many cultures that make up this nation. This Cajun-inspired charred okra and shrimp is one of my favorite examples of American cuisine. It features Cajun flavors like thyme, Cajun spice mix, and gumbo filé, without the fat-laden roux.
