Custard ice cream is an exceptionally rich, smooth style of ice cream made with an egg-based custard as the foundation. Unlike Philadelphia-style ice cream, which is made from cream, milk, and sugar alone, custard ice cream incorporates egg yolks that are gently cooked with the dairy to create a velvety, luxurious texture.

Why add alcohol? Many of my most popular ice cream and frozen dessert recipes do include alcohol. It is almost always an “optional” ingredient!

Yes, a small amount of alcohol can noticeably improve the texture of frozen custard. It lowers the freezing point of the mixture, which means less of the water freezes solid. How does it improve the custard?

Do you have to have alcohol to get the creamiest result? NOPE! Some of these delicious frozen custard do, and some don’t. If you wish to add it, all you need is 1-2 tablespoons.

More Custard Ice Cream Recipes

As I began working on this collection of ice cream recipes, I did focus on “unique” custard ice cream recipes. I discovered the selection of recipes for “Philadelphia-style ice cream” is more varied and numerous.

Why, you ask is this so? My thought process goes like this: There’s no need to adjust egg yolks, cooking temperatures, or custard thickness with the addition of fruit, liqueurs, spices, herbs, etc. with the simple mixture of cream, sugar, and flavorings. Recipe developers can experiment quickly and publish more variations.
